Healthy snacks help us to stay nourished and energized every day, especially during stressful times. However, it’s easy to reach for the same old things, which can get boring. While we are still under some degree of stay-at-home orders, you might try one of these 3-ingredient snacks to change things up!
Coconut-Pistachio Stuffed Dates:
Just slice a couple dates lengthwise, take out the pits, and sprinkle in some finely chopped pistachios and shredded coconut.
Baked Banana Chips:
4 medium ripe bananas (or 3 large)
3 tablespoons orange juice (or juice from 1 large lemon)
Preheat oven to 200°F (warm setting). Line a baking sheet with parchment paper or a Silpat mat.
Peel the bananas and cut into 1/4-inch slices. Dip each slice into the orange juice and place on the pan. Sprinkle with cinnamon.
Bake for 3 to 4 hours, or until your chips are dry and slightly brown, making sure to flip your chips halfway through.
Remove from the oven, and once cool, chips can be stored in an airtight container.
Almond Butter Granola Bars
3/4 cup raw honey
1 cup raw almond butter
3 cups old fashioned oats
Heat the almond butter & honey in a saucepan on low heat until melted. Stir and remove from heat.
Pour mixture over oats in a large bowl. Stir thoroughly.
Pour and press batter into a 9-inch baking pan and bake at 350 degrees for 15 minutes.
Remove and let cool.
