The upside to making something healthy: even simple recipes can be satisfying and fun!

Cheddar-Broccoli Egg Muffins
1 cup steamed broccoli (or frozen broccoli that’s been defrosted)
1/2 cup sharp cheddar shredded
1/2 tsp sea salt
1/2 tsp pepper
Preheat oven to 375 degrees. Coat a 6-hole silicone muffin tin with oil.
In a bowl whisk the eggs, chopped broccoli, sea salt, and pepper together.
Pour egg mixture into silicone muffin tins and divide the cheese on top evenly among them.
Bake for 12-15 minutes, or until the eggs are set. Let cool and then remove from muffin tins.
Vegan Crispy Rice Treats
2 cups rice crispy cereal
1/2 cup peanut butter can sub for almond/cashew
1/2 cup maple syrup can sub for agave nectar or brown rice syrup
Line an 8 x 8-inch baking tray with baking paper and set aside.
In a large mixing bowl, add your crispy rice cereal and set aside.
Stovetop or in the microwave, melt your nut butter with your syrup and then pour the mixture into the crispy rice cereal and mix well.
Pour mixture into the lined baking tray and press firmly into place. Refrigerate for at least 30 minutes to firm up.
